Sauteed udo's peel

If I throw away the flesh, I want to eat its peel. It's so good. For all that, you should dress the fresh with miso.

  1. Cut udo into 2 inches in length. Pare udo. Make thin cuts through a stack of thin slabs of udo's peel with the grain running in the same direction as the cut.
  2. Heat sesame oil in frying pan. Put red pepper which is removed seeds, and take out when it color turns to brown. Put udo'peel and stir-fry for 2 or 3 minutes over high heat until it becomes soft. Add 1 teaspoon sake, 1 teaspoon soy sauce, 1 teaspoon mirin, 1/2 teaspoon sugar, and stir-fry lightly.
  3. Place in a bowl and sprinkle white sesame seeds.
