Vinegared soft roe and cucumber
When a fresh soft roe was available, I make this.
Ingredients
- soft roe "shirako"
- cucumber
- rice vinegar
- salt
- vinegar dressing (1 tablespoon rice vinegar, 1 tablespoon soup stock, a pinch of sugar, a pinch of salt, a little of soy sauce)
Directions
- Wash shirako by salty water and take aawy black string. Cut into a bite pieces with be careful not tear.
- Sprinkle with a pinch of salt over cucumber and roll over on cutting-board to rrmove pricks. Wash lightly and slice thinly crosswise. Sprinkle with a pinch of salt and let stand for 10 minutes. When cucumber becomes limp, soak in rice vinegar water and squeeze out water.
- Serve shirako and cucumber and pour over the vinegar dressing.
