Sauteed udo's peel
If I throw away the flesh, I want to eat its peel. It's so good. For all that, you should dress the fresh with miso.
Ingredients
- udo's peel for 1 udo
- 1 red pepper
- 1 tablespoon sesame oil
- sake, soy sauce, mirin, sugar
- white sesame seeds
Directions
- Cut udo into 2 inches in length. Pare udo. Make thin cuts through a stack of thin slabs of udo's peel with the grain running in the same direction as the cut.
- Heat sesame oil in frying pan. Put red pepper which is removed seeds, and take out when it color turns to brown. Put udo'peel and stir-fry for 2 or 3 minutes over high heat until it becomes soft. Add 1 teaspoon sake, 1 teaspoon soy sauce, 1 teaspoon mirin, 1/2 teaspoon sugar, and stir-fry lightly.
- Place in a bowl and sprinkle white sesame seeds.
