  1. Put Kombu into pan and pour 1 cup sake and heat. When sake comes to boil, add 1/2 tablespoon sugar, 1 tablespoon mirin, a little of soy sauce and a pinch of salt.
  2. Boil again, put fillet of flatfish and cover with drop-lid and simmer for 10 minutes over a moderate heat with pour sauce over fillet sometimes.
